This just so happens to be one of my all time favourite recipes and it’s particularly delicious to eat after spending a morning working up the allotment in the cold. It’s easy and simple to make but is very yummy, serve with chunky bread and mash for the perfect dinner time meal!
Sausage, butterbean and kale casserole:
Serves: 4 people
Cooking time: 30 minutes
Ingredients:
8 sausages,
1 onion
2 garlic cloves
800g of tinned chopped tomatoes
800g of butterbeans
100g kale
4 sprigs of thyme
600ml chicken stock
Instructions:
Cook the sausages for roughly 10 minutes or until golden. Put in a large casserole pot and add the chopped onions and garlic, cook for 5 minutes.
Pour in the chopped tomatoes, drained butterbeans, chicken stock and thyme. Cook for 10 minutes.
Add the kale into the casserole pot and cook for a further 3 minutes. Serve with chunky bread.
